We bring the rich culinary heritage of Shinshu into every bite. These traditional Nagano ingredients are at the heart of our focaccia, adding depth and character you won't find anywhere else.

A traditional Japanese probiotic seasoning made by fermenting rice koji, salt, and water. Rich in enzymes that break down proteins and starches, shio koji tenderizes and intensifies savory umami flavors with a mild, salty-sweet complexity.

Shinshu miso has been crafted in Nagano since the Kamakura period. Made from soybeans, rice koji, and salt, this light golden miso accounts for nearly half of all miso produced in Japan. Its clean, salty-umami flavor is shaped by the mountain climate and pure water of the Japanese Alps.

Nagano's cool, misty forests are home to some of Japan's most prized mushrooms. From earthy shimeji to fragrant maitake, these varieties thrive in the region's clean mountain air and mineral-rich soil. Their deep, woodsy umami transforms our Mushroom & Shio Koji focaccia into something truly special.

Our dough begins with the purest ingredient of all: Hakuba's pristine alpine water, filtered naturally through layers of granite and snowmelt from the Northern Japanese Alps. This exceptionally soft, mineral-balanced water creates a lighter, more delicate crumb in our focaccia - a quality you can feel in every bite.
